Cake Classes

Cake classes are held in my studio, which is based in Sopley, near Christchurch, on the Dorset, Hampshire border.  The studio is the perfect environment to learn in small groups, in a relaxed and friendly environment.  With a maximum of 4 students per class.

All tools, materials and equipment will be provided for you to use during the class.  Refreshments and a light lunch are also included in full day classes.

Below is a list of the classes I currently have on offer, skill level guidance has been given.   Payment can be made via PayPal or BACS and can be made in full immediately or by 2 installments of 50%, one due immediately one due 30 days prior to your class.

sharp edge & modern rose

Tuesday 26th March 2019 - 10am - 5pm - Fully Booked

Tuesday 15th October 2019 - 10am - 5pm

£195 per person  
Skill level - Beginner

Learn the secrets to achiving super sharp edges using ganache and fondant.  Add touches of gold lustre and create a large modern sugar rose and gold leaves to adorn your cake.

In this class you will learn how to:

  • Split, fill & ganache a 6" sponge cake to give a level and firm foundation to your cake.
  • Ice your cake using luxury fondant sugar paste to achieve the super sharp edges I am known for.
  • Create a large modern style rose and gold leaves.
  • Apply touches of gold lustre to your cake.
  • Dust & tape your leaves.
  • Arrange your rose and leaves on your cake.

2 day sugar flowers

Monday 13th & Tuesday 14th May 2019 - 10am - 5pm

£350 per person
Skill Level - Intermediate

Spend 2 days in the studio creating these beautiful country garden style sugar flowers.  Working with florist paste you will learn my secrets to creating modern style sugar flowers.

In this class you will create:

  • Cupped natural roses
  • David Austin rose
  • Sweet Peas, including wiring, dusting &  taping.
  • Lavender
  • Berries
  • Leaves

Rustic luxe wedding cake

Wednesday 16th - Friday 18th October 2019 - 10am - 5pm

£550 per person  
Skill level - Intermediate

In this 3 day class you will work with dummy tiers to create this beautiful modern luxe design decorated with an abundance of modern sugar flowers, perfect for your cake portfolio.

In this class you will learn how to:

  • Ice and smooth dummy tiers, including a 6" deep tier to achieve super sharp edges.
  • Create a textured rustic effect on your bottom tier.
  • Apply both gold and silver leaf to your cake.
  • Make an abundance of sugar florals including - Anenome, Natural Roses, Ranunculus, Sea Holly and Leaves.
  • Learn how to correctly stack and dowel a 3 tiered cake.
  • Arrange the sugar flowers on your cake.

5 day professional wedding cake designer class

Monday 11th - Friday 15th November 2019 - 10am - 5pm

£1100 per person 
Skill Level - Intermediate

This exclusive 5 day intensive class covers both the creative and business aspects of running a time and cost effective cake business.  It is perfect for an established cake designer who is looking to upskill and uplevel their business, to be inspired and take away new skills and approaches to grow their business.

In this class you will:

  • Create a stunning modern geometric wedding cake.  Learn how to get super sharp edges, ice a hexagon tier, create marbled icing, hand painting, gold edging.  Make beautiful sugar flowers including: Old English Roses, Natural Roses & Leaves.
  • Decorate hexagonal iced biscuits with marble and gold brush.  Ice mini doughnuts, make cake pops on mini forks and decorate with gold accents.
  • Master how to design, style and price a show stopping dessert table.
  • Learn how to accurately price your cakes to maintain a profitable business.
  • Evaluate and maximise your marketing.
  • Get to grips with social media including useful design apps, planning tools, enhancing your visuals and content.
  • How to conduct success client consultations, essential forms, useful business tools and apps to maximise your efficiency.
  • As with all my classes you will be supplied with full notes, and electronic links to recommended resources.
  • 4 weeks after the class I will hold a one to one 30 minute follow up call with you to offer any additional support or guidance with your business.

florals, hand drawing & torn edge wedding cake

25th & 26th November 2019

£375 per person  
Skill level - Intermediate 

During this two day class you will create this stunning feminine 4 tier dummy cake.  Incorporating flouncy roses and leaves a torn paper edge effect & a pretty hand drawn floral pattern.

In this class you will learn how to:

  • Ice two dummy tiers to achieve a flawless sharp edge.
  • Make 3 different styles of 'flouncy' natural roses.
  • Wired natural leaves
  • Learn how to create custom floral hand drawn pencil designs.
  • Create a torn paper edge effect on 2 tiers.
  • Dust & tape your leaves.
  • Learn how to correctly stack and dowel a tiered cake.
  • Arrange your rose and leaves on your cake & finish with a flowing silk ribbon.

ONE TO ONE CLASSES

Do you have something specific you would like to master?  I can tailor make a class just for you & your skill level.

‚ÄčABOUT OUR CLASSES

  • Full class notes will be supplied for all classes
  • All classes are small group classes with no more than 4 students to ensure ample time for questions and assistance throughout the class
  • Ample unrestricted free parking is available at the studio .
  • All classes will be held at our studio in Sopley: Unit 3, Costrells, Derritt Lane, Sopley, BH23 8AX
  • Please be aware that we will be unable to refund any classes once you have booked unless we have to cancel the class and if so, a full refund will be given.
  • Please make us aware of any dietry requirements when booking
  • In cases of inclament weather, causing the studio to be inaccessable or we feel it is unsafe for students to travel to a class we reserve the right to cancel the class and arrange for the class to be rescheduled & will try to accommodate suitable alternative dates for students wherever possible.
